Role Overview:
At Park Hotel Kenmare, we are seeking a highly experienced and visionary Restaurant Manager to lead the operation of our fine dining restaurant, Landline. The ideal candidate will have a proven track record of excellence in fine dining leadership and Michelin experience in a stand-alone restaurant, or a luxury hotel restaurant. This role is critical in our strategic trajectory and positioning.
Key Responsibilities:
Leadership & Operations:
- Oversee daily operations of Landline, ensuring the highest level of guest experience.
- Lead, inspire and manage a team of servers, sommelier and supervisors.
- Implement and uphold world-class service protocols with rigorous attention to detail.
- Work closely with the Head Chef to ensure seamless front-of-house/back-of-house synergy.
Guest Experience:
- Create a refined, personalised dining atmosphere for our discerning clientele.
- Resolve guest concerns professionally and discreetly, anticipating needs to exceed expectations.
- Ensure consistency in service delivery, ambiance and overall dining experience.
Financial & Administrative:
- Drive profitability while maintaining impeccable service quality and fine dining standards.
- Develop rosters in alignment with labour costs and business demand.
- Monitor and manage budgets, labour costs, inventory and operational expenses.
- Create strategic service plans and support marketing efforts aimed at Michelin recognition.
Team Development:
- Recruit, train and mentor a high-performing team with a culture of excellence and accountability.
- Create Standard Operating procedures to aid team members in achieving all areas of operational excellence.
- Conduct regular performance evaluations and coaching sessions.
- Foster a culture of continuous improvement and innovation in service delivery.
Key Requirements:
Education & Qualifications:
- Bachelor’s Degree or Diploma in Hospitality Management or a related field is advantageous.
- Advanced wine knowledge (WSET Level 2 or above) preferred.
Experience:
- Minimum 2 years of fine dining Restaurant Management/ Assistant Management experience.
- Proven leadership in a Michelin-starred or Michelin-aspirational environment is preferred.
- Experience in luxury hotels or renowned standalone restaurants required.
Skills & Competencies:
- Exceptional knowledge of fine dining etiquette, wine service and Irish culinary trends.
- Strong leadership and interpersonal skills with the ability to inspire and lead by example.
- Impeccable attention to detail, poise under pressure and a guest-centric mindset.
- Proficient in restaurant management software (e.g. Tablepath, Pixel).
