Longueville Manor is the 1st and only 5 red star Hotel, with one Michelin key in the Channel Islands. It is situated a mile to the east of St. Helier, the capital of the Island of Jersey. The island is fringed with miles of sandy beaches and is frequently blessed with the longest hours of sunshine in the UK. Set in 17 acres of parkland, this 13th century Norman manor house has been lovingly restored and run as a hotel by the Lewis family for over 75 years.

Today, the hotel has 23 double rooms, 4 suites and a 2 bedroom cottage, with a 3AA rosette restaurant, which enjoys a strong local following as well as an international reputation and is the only Relais & Châteaux member in the Channel Islands.


We are seeking a talented and passionate Demi Chef De Partie to join our culinary team in Jersey. As a member of our kitchen brigade, you will play a crucial role in creating exceptional dining experiences for our guests whilst honing your skills in a dynamic and innovative environment.

  • Assist the Chef de Partie in the day-to-day operations of your assigned kitchen section
  • Prepare high-quality dishes that meet our exacting standards of taste and presentation
  • Ensure proper food handling, storage, and hygiene practices are followed at all times
  • Collaborate with other kitchen team members to maintain a smooth and efficient workflow
  • Contribute creative ideas for new menu items and seasonal specials
  • Maintain an organised and clean work area
  • Assist in stock rotation and inventory management
  • Train and mentor junior kitchen staff
  • Adapt to various roles within the kitchen as needed
  • Continuously improve your culinary skills and knowledge

  • Proven experience as a Demi Chef de Partie or in a similar culinary role
  • Formal culinary education or relevant vocational training
  • Strong technical cooking skills and knowledge of various cuisines
  • Understanding inventory management
  • Excellent knowledge of food safety and hygiene standards
  • Valid food handling and safety certifications
  • Strong attention to detail and commitment to quality
  • Ability to work effectively under pressure in a fast-paced environment
  • Excellent time management and organisational skills
  • Good communication and teamwork abilities
  • Creativity and passion for innovative cooking techniques
  • Flexibility to work varying shifts, including evenings, weekends, and holidays
  • Experience in a fine dining or Michelin-starred environment is highly desirable
  • Commitment to continuous learning and professional development
